Ingredients
- Strawberries
- Brown Sugar
- Balsamic Vinegar
- Vanilla Ice Cream
- 500g of ripe but firm strawberries
- 2 tablespoons of brown sugar
- 1 tablespoon of good quality balsamic vinegar
- 4 scoops of vanilla ice cream
- Fresh mint leaves (optional)
- A pinch of freshly ground black pepper (optional, but highly recommended)
Preparation
- Prepare the strawberries
Wash and thoroughly dry the strawberries. Remove the stems and cut them in half or into large quarters, depending on their size. - Marinate lightly
Place them in a bowl and sprinkle brown sugar on both sides. Add the balsamic vinegar and let them sit for 5 minutes to allow them to release their juices. - Roast
Preheat the grill to a high temperature.
Place the strawberries directly onto the very hot grill and grill for 1–2 minutes on each side, until the sugar caramelizes and light golden marks appear. - Plating
Serve the strawberries while still warm and accompany them with a quenelle or scoop of vanilla ice cream.
Garnish with a fresh mint leaf and, if you're feeling adventurous, a very fine pinch of freshly ground black pepper to enhance the flavor.
Chef's Tricks

The grill must be very hot so that the sugar caramelizes quickly without the strawberry becoming too soft.

If you want a more intense finish, you can first reduce the balsamic vinegar in a saucepan until it has a syrupy texture and use it as a final touch.

For a more gourmet version, add some dark chocolate shavings or a little orange zest.
