INGREDIENTS

  • 500gr New Potatoes
  • Butter
  • Salt
  • Pepper
  • Nutmeg

 

PREPARATION

  1. Cook the potatoes for 2 minutes in plenty of salted water, remove from heat and allow to cool.
  2. Grate the potatoes with a coarse grater.
  3. Season with salt and pepper to taste and a touch of nutmeg.
  4. Place a knob of butter in a non-stick frying pan, add the grated potato and cook as if it were a potato omelette. Serve piping hot.

 

THE CHEF'S TRICK

Once the potato is boiled it is better to leave it cool even from one day to the next. Grated is much better.
