Oysters with apple granita

Preparation: 3 minutes (7 and the freezing time for the granita)

For the slush
In a blender, blend 4 Granny Smith apples, skin on and cored. Add the juice of half a lemon and a tablespoon of sugar. Strain and freeze.

Mounting
Open the oysters and remove the meat from the shell. Place them on a plate with coarse salt to cover. Season with lemon juice, oil and pepper.

Scrape out some of the frozen apple juice to make the granita and place a spoonful on each dressed oyster. Garnish with sprouts.

  • 4 oysters
  • The juice of half a lemon
  • A few drops of extra virgin olive oil
  • Freshly ground pink and black pepper to taste
  • Sprouts for decoration
