INGREDIENTS
- 300gr Desalted Cod
- 3 Boiled Potatoes Without Skin
- 2 Garlics in Slices
- 300cl Olive Oil 0.4º
Breaded
- 250gr Flour
- 1 Egg
- 200g Pressed Yeast
- 250gr Beer
PREPARATION
- For the batter, mix all the ingredients and let it rest.
- For the fritters, put a dash of olive oil in the pan, add the garlic and cod and sauté for 10 minutes. Then, with the help of a food processor, place the drained cod together with the potato, blending and adding the oil slowly until you get the texture of a purée. Leave to rest in the refrigerator for 12 hours.
- Heat ½ L of olive oil in a wok to 180 °C. Form balls with the dough, coat them in the batter and fry.
THE CHEF'S TRICK
For greater creaminess, it is advisable to use cod loins.
